Biography
Mario Ciaffi is an Associate Professor in Department of Biological Agro-Food and Forestry Systems (DIBAF) of the University of Tuscia (Viterbo). He is currently responsible for a DIBAF operational unit under the research project "Morphological, biochemical and genetic characterization of local varieties of P. vulgaris of the Region of Lazio", funded by ARSIAL. Prof. Ciaffi Mario is the author / co-author of more than 100 scientific papers, of which 50 in international journals with referee.
Research Interest
Study of the relationship between the qualitative and quantitative characteristics of whey reserve proteins and rheological properties of gluten.
