Biography
Jay is the course coordinator and lecturer for Home Economics within the Bachelor of Education (Secondary) teaching specialisation in the School of Education and The Arts. Her interests include developing pre-service teachers’ Professional Practice and use of positive and productive pedagogies in home economics classrooms. Jay received her doctoral qualification for her research into spirituality and home economics education from Griffith University, Australia. Her specialist interest areas are Home Economics, Health Education, spiritual health and well-being, education for sustainable development and active global citizenship. Prior to becoming a registered teacher in 2009, Jay had her own business "Leopard Spots: Changing Your Impossible" which was an organiser service for small home-based businesses, and 16 years experience working as a legal secretary and executive assistance in law firms and property development in Brisbane. Jay is one of 12 educators within her immediate and extended family. After working in the public and private sectors for many years, it was inevitable that Jay also entered the teaching profession. Since transitioning into Higher Education, Jay has become a strong advocate for Home Economics and administers the social network HomeEcConnect. She has published a number of papers and book chapters about her research and presented at national and international conferences. Jay is an accredited International Professional Home Economists (IPHE), member of the International Federation for Home Economics, and the Home Economics Institute of Australia.
