Biography
Rebecca Coughlan received her degree from Limerick Institute of Technology (LIT) in Bio-analysis and Biotechnology in 2015. As part of her degree, she worked on two laboratory projects; “The optimization of Polymerase Chain Reaction” where she developed many skills and gained knowledge of the understanding and workings of DNA. The other project was titled “Post-Harvest Proximate analysis and Microbial load on leafy vegetables” which was a study based on the EDEN project and the Mars One mission; which gave a strong indication to the type of nutritional support the Martians would get from the chosen vegetables. Currently Rebecca is working on her M.Sc in which is she will investigate the physiochemical, biochemical and sensory aspects of Irish rapeseed oil.
