He received Graduate in Food Engineering from Faculdade de Engenharia de Alimentos (1975), master's at Food Technology from Faculdade de Engenharia de Alimentos (1980) and ph.d. in Food Engineering from Faculdade de Engenharia de Alimentos (1990). Has experience in Science and Technology of the Food, focusing on Food Engineering, acting on the following subjects: biotechnology, enzymology and fermentations, protein structure, structural bioinformatics and sting.
