Biography

Elke Stedefeldt Graduated in Nutrition from the University of São Paulo - USP (1991), specializing in Food Quality Management at the Universidade São Judas Tadeu - USJT (1999), Master's degree (1998) and Doctorate (2003) in Nutrition Science at the Universidade Estadual de Campinas - UNICAMP and specialist in Collective Food by the Brazilian Association of Nutrition (2012). Adjunct professor at the Federal University of São Paulo - UNIFESP, with undergraduate activities, in the postgraduate program in Nutrition, Food and Health - PPGANS, in the graduate program in Nutrition and in the master's program Teaching in Health Sciences of the Center of Development of Higher Education in Health - CEDESS. Its activities are developed under an interdisciplinary approach between collective feeding, food science and public policies from the perspective of Health Education. The topic of Risk Perception of Foodborne Diseases and the Triangulation Analysis of quantitative and qualitative data are the guiding axes of their investigations. She was the coordinator of the undergraduate course in Nutrition at UNIFESP and the Collaborating Center for Nutrition and School Nutrition - CECANE UNIFESP. She is also the leader of the Research Group on Food Quality - GeQual. She participates as researcher of the research group Research and Practices in Collective Nutrition and the Group of Studies of Health Teaching Development - GEDDS. Coordinates the Study Group: Dialogues on food safety and risk in interdisciplinary contexts. She is a consultant for the National Sanitary Surveillance Agency (ANVISA) in mass events.

Research Interest

It develops studies related to the subjects: knowledge, attitudes and practices; training of manipulators; culture of food safety in the collective feeding; risk of foodborne diseases and school feeding. He is a collaborating member of the Brazilian Association of Nutrition - ASBRAN.
