Biography
Matt primarily studies sensory science. His research focuses on the sensory aspects of food (taste, appearance, and texture), and is largely concerned with the factors that influence the purchase of food products. Recently conducted studies have examined the use of new sensory methods, and how these methods can be used to assess new food products. Additionally, his research examines what factors influence purchases of local food, and involves creating new food products for local companies.
