Biography
Dr. Jicheng Chen is lecturer in the department of food science, College of Food Science, Fujiang Agriculture and Forest University in China. He received his Ph.D. in the department of food science and nutrition, Zhejiang University. He was a visiting scholar in the Department of Food Science at Cornell University from March 2013 to March 2014. Dr. Chen is a member of the Institute of Food Technologists (IFT) of American and Chinese nutrition society, and has published more than 20 original scientific papers in peer-reviewed journals. He got three authorized national patent. He published 4 National Planned Textbook as a vice editor-in-chief or editor. As a principal investigator, he got the research grants from National Natural Science Foundation of China (NNSF of China, No.31201350), National Key Technology Research and Development Program of the Ministry of Science and Technology of China (2006BAD27B09), National High Technology Research and Development Program of China (2006AA10Z316), China Postdoctoral Science Foundation (CPSF, No. 2012M521265) and Natural Science Foundation of Fujian Province (No.2012J05039).
Research Interest
Functional foods for disease prevention and health promotion targeted at the hyperlipidaemia and hypertension diseases, the natural products and herbal formulations for antioxidant activities. Specific interests include: 1) health benefits of antioxidants/phytochemicals in natural food and Chinese herbal; 2) nutraceuticals component extraction, separation and identification; 3) food genomics and functional foods for disease prevention and health promotion targeted at hyperlipidaemia, hypertension cancers, aging diseases (cell signal pathway).
