Prof. Anna R. Barnes is Associate Professor of Animal Science in the Department of Animal Science, University of Ghana, Legon.
Her area of specialization is Meat Science and Meat Technology. She has over thirty five years of teaching and research experience in Meat Science and Pig production. She was a member of a team of Scientists who successfully genotyped pigs for selection of stress resistant ones for breeding in I S U Ames, USA. She is consultant on Meat Preservation Technologies. She supervises the Meat Processing Training in the Department of Animal Science. Her current research focuses on Physical Characterization of the Ostrich (Struthio camelus) carcass and the nutrient profile of the meat.
