Biography

•Multi-disciplinary background in nutrition, food chemistry, rheology, bioprocessing, and food quality and safety  •Seven years research experience on conducting peanut processing to improve peanut quality and ensure food safety •Teaching experience in instructing lecture/lab sessions of food ingredients, analytical techniques, and problems and design in food and bioprocessing science, communicating with undergraduate and graduate students, and cooperating with instructors •Comfortable working independently and in a team environment, experiences in working in or cooperating with top universities (NCSU, Duke, and UNC), government lab (USDA), as well as industrial companies •Creative thinking in novel food processing method and packaging
