Dr. Usha Antony is currently working as a Professor in the Department of Department of Biotechnology, Anna University , India. His research interests includes Food Technology. He /she is serving as an editorial member and reviewer of several international reputed journals. Dr. Usha Antony is the member of many international affiliations. He/ She has successfully completed his Administrative responsibilities. He /she has authored of many research articles/books related to Food Technology.
Research Interest
Millet fermentation, bacteriocins, prebiotics, probiotics, polyphenols, fermentation and sensory studies on stevia, recombinant vaccine in Infectious Bursal Disease Virus (IBDV)
