Dr. Rajesh V. Wagh is an Assistant Professor at Department of Livestock Products Technology, College of Veterinary Science, Guru Angad Dev Veterinary & Animal Sciences University, Ludhiana, India.
Research Interest
Development of potentially functional meat products with the incorporation of various bioactive plant materials. Improvement of the quality and safety of meat and meat products through combined novel technologies. Study of the implications of chemical changes, physical and structural properties in meat products. Valorization of meat products. Design and characterization of biodegradable, edible and/or active films. Obtaining of bioactive peptides from animal products. New product development: sensory, quality, food safety, shelf-life and marketability New applications of phytochemicals and other bioactive compounds to enhance food quality and human health; processing technologies to improve consumer acceptability of health-promoting foods Application of traditional and emerging technologies to meat products. Utilization of slaughter houses by-products into value added products.
