Research Interest

My interest lies on the domains namely promotion of underutilized indigenous crops, vegetables and fruits through development of innovative products, value addition, processing and identification of nutritional values. Furthermore, my specialization is on exploring the causes and functional consequences of micronutrient deficiencies and methods for micronutrient delivery (food-based from regional diets, non-traditional foods, food fortification and evidence based micronutrient supplementation). My research focus will also be on nutrient composition of indigenous foods including analysis of phytochemicals and other bioactive components. Community – based research involving both quantitative and qualitative research techniques.
