Biography
Dr Frias's is assistant head of the School of Food Science and Environmental Health and also lectures in Food Chemical Analysis. He is a professional member of the Institute of Food Technologist and the Irish national contact for the Iseki Food Association.

Mathematical modelling of biological processes (food and pharmaceutical). Product natural variability and shelf life. Postharvest technology. Drying technologies and quality. Metabolic profiling. Quality Assurance in food studies.
