Biography
Mr Bruno Etienne is a Culinary Training Officer in the award winning Academy Restaurant within the Department of Hospitality and Tourism Management. Bruno studied hospitality and catering management at the college Hélène Boucher in Le Mans France in 1976. He then held a number of international appointments within a range of fine dining establishments throughout France, Italy and the UK, including Michelin star rated restaurants.
Research Interest
Bruno’s primary research interests include digital media, healthy eating, food innovation and molecular gastronomy. He has been involved in a number of pedagogic research projects to support student learning such as the Virtual Academy Restaurant 3D App development. In addition, Bruno has completed a number of staff development activities within the area of molecular food innovation. He is responsible for the teaching and assessment of undergraduates studying BSc Hons International Hospitality Management and BSc Hon Culinary Arts Management at levels four, five and six.
