Research Interest
Dr. TENORE's research focuses on the isolation and characterization of bioactive components from national and foreign food matrices. These components are subjected to in vitro, in vivo and clinical trials to evaluate their biological properties, in particular antioxidant power, metabolic parameters and antimicrobial properties. In particular, the objectives of recent research are: • Valorizing typical foods from the Campania Region and the Mediterranean basin, both nutritional and biological; • Appreciate the use of such foods, their extracts or purified bioactive principles as matrices suitable for the formulation of nutraceuticals; • Recover waste from food processing as a source of biologically active extracts suitable for the formulation of nutraceuticals.
