Biography
Marco Esti is a Professor of Enology and enzymatic technologies for the food industry in Department of Biological Agro-Food and Forestry Systems (DIBAF) of the University of Tuscia (Viterbo).
Research Interest
Study of technological, hygienic, nutritional and sensory aspects of various agro-food products through the evaluation of chemical compounds, previously identified as specific indicators; the development and application of innovative analytical methods to simplify the control of technological processes and to evaluate the qualitative characteristics of agro-food products, also in order to improve the quality and safety of use of the finished product.
