Biography
Yoshichika Kawai has done his Doctor of Medicine from Nagoya University in 2003. Currently he is working as Professor in Faculty of Medicine at Tokushima University. His research interests are Food Science, Functional Food Science, Mechanism of lipid peroxidation and oxidative DNA damage, Inhibitory effect of antioxidants in food against oxidative stress (polyphenol, flavonoids, oxidative stress, lipid peroxidation, mass spectrometry). Several papers of his work were pubished in reputed international journals. He is also the member of Japan Society for Bioscience, Biotechnology, and Agrochemistry, The Japanese Society of Food & Nutrition, The Molecular Biology Society of Japan, Japan Food Factor Society, Japan Society for Oxidative Stress.
