Biography

Currently, I am an Associate Professor of food processing and postharvest technology. I graduated with a PhD degree from the University of Illinois, Urbana-Champaign, in 1992. I have served as a Chairman of the department of Food Science and Technology at Jomo Kenyatta University of Agriculture and Technology(JKUAT) and also at Egerton University. I have also served as Associate Dean and substantive Dean of the Faculty of Agriculture at JKUAT, for 11/2 and 4 years respectively. My research interests are in value addition of agricultural and marine produce and postharvest technology of horticultural produce. I am currently a principal investigator involved in two projects one on value addition of herbal plants and the other on watersaving irrigation , postharvest and value addition technologies of horticultural produce. I have wide academic and research networks. I am involved in a collaborative European Union project in quality management systems in food processing. The project entails training food science graduates and food processing employees in GMP,GHP and HACCP and enhancing quality of products from these food plants for export to international markets. I am also involved in another collaborative project involved in entrepreneurship in agriculture, covering institutions in six East African countries and an institution in the Netherlands. I also spear-headed the development of a regional MSC programme in Research Methods, hosted by JKUAT, for Eastern and Southern Africa covering universities in ten of the countries in the region. I have seventeen publications in peer-reviewed journals and equally many conference articles to my credit. I have supervised many BSc, MSc and PhD students towards the attainment of their degrees. I would like to share my experiences through staff and research exchange programmes with institutions both at regional and international levels.
