Biography
Alcina Bernardo currently holds an appointment as Food Engineering Coordinator at the Faculty of Biotechnology. She got her B.Sc. degree in Chemical Engineering from University of Oporto, Portugal, in 1985. Her M.Sc., in 1986, and her Ph.D., in 1990,were in Food Processing from the Ecole Nationale Supérieure des Industries Agricoles et Alimentaires in Massy, France. In 1990 she became Assistant Professor at the Catholic University of Portugal. She lectures engineering courses. Her research interests include: (i) post harvest technology issues; (ii) quality assessment and optimization of fresh / fresh-cut fruit and vegetables after hurdle technology applied-chemical dip and/or edible coating and/or vacuum packaging and/or cold storage in controlled/ modified atmosphere, with respect to physical, chemical, biochemical, microbiological and sensory parameters; (iii) packaging design for fresh/ fresh-cut commodities and (iv) drying of food products.
