Biography
Ana Gomes is Assistant Professor of the Faculty of Biotechnology and a member of its Research Centre. She got her B.Sc. degree in Pharmaceutical Sciences from the Faculty of Pharmacy of the University of Coimbra, Portugal, in 1990 and her Ph.D. degree in Biotechnology (Biochemistry major) from the Catholic University of Portugal in 1999.
Research Interest
Her research interests are focused on: (i) dairy science and technology; (ii) nutraceutical ingredients and functional foods: characterisation of important physiological, biochemical, functional and technological properties of functional ingredients (probiotics, prebiotics, antioxidants, omega-3, biopeptides, beta-glucans), and utilisation in dairy and non-dairy products and enhancement of viability thereof; (iii) use of probiotics/lactic acid bacteria as cell factories for nutraceuticals; (iv) valorisation of by-products from different food and marine sources; (v) protection technologies such as micro- or nanoencapsulation; (vi) characterization/improvement of traditional dairy products and (vii) consumer science: nutrition education and communication.
