The research activity in Food Biochemistry and Nutrition: studies carried out on dairy products and "infusions" through the identification of bioactive molecules by LC-MS; ability to inhibit enzymes involved in pathologies, metabolism of bioactive molecules; influence of bioactive molecules on cholesterol transport (hypocholesterolemia), influence on the expression of cholesterol carrying proteins in cell membranes.
