The work developed mainly focuses on: Use of wild species to expand the genetic base Characterization of both wild and cultivated varieties Reactivity against celiac disease of different fractions of prolamins Identification of epitopes with low reactivity against celiac disease Development of new cultivars to create non-toxic plant varieties for the celiac collective
