Beatrice Mgaya Kilima holds a B.Sc. Degree in Food Science and Technology, MSc. in Food Science from Sokoine University of Agriculture (SUA) and PhD from Norwegian University of Life Sciences (NMBU)). Her areas of specialty are Food Chemistry, Food Toxicology, Food Analysis and Instrumentation, Functional Foods, Food Safety and Quality Assuarance. She is teaching both undergraduate and postgraduate students, research and consultancy on various aspects of Food Science and Technology. She has published 3 research papers in International peer reviewed journals. The research area of interests are antioxidant properties of fruits and vegetables, Formulations of foods products for PLWHA, food safety and hygiene in processing these products and Improving the safety of animal source foods and ensure continued market access for poor farmers in sub-Saharan Africa
