Biography

Prof. Monica Lyimo holds a BSc. Agriculture with specialization in Food Science and Technology (1981), MSc. In Food Science (Dairy Science) (1985), PhD in Food ( 2005). Her areas of specialization are Food Processing, Dairy Technology, Food safety. Prof.Lyimo is currently involved in teaching undergraduate ad postgraduate students. Her current research are product development and value addition, Microbiological quality of fresh and processed food products, post -harvest losses of fruits and vegetables. She has published eighteen papers in different peer reviewed journals, training manual on groundnuts, compendium on Introduction to Microbiology for Agriculture and Food Science Students, one training manual on groundnut utilization
