Responsibilities: Chair of the Departmental Outreach Group. Director of Postgraduate Studies and PGR Admissions Tutor Areas of Interest: The focus of my research is on the production of bioproducts that can be used as functional food ingredients such as, whey proteins and peptides, carotenoids and polyphenols. In addition I am interested in other non-food bioproducts such as, biosurfactants. My research includes the development of novel separation methods and/or processes and the investigation of the mechanisms underpinning the separations. I have also initiated research in the area of nanoencapsulation of food bioactives.
