She has studied the chemistry, biochemistry and metabolic effects of trans fatty acids for nearly thirty years. She was the first researcher to report the effects of these isomeric fatty acids on milk fat in mice, cows, and women. Most of the data on trans fatty acids that are presented in the USDA food composition tables came from the research laboratories at the University of Maryland under contract with the USDA.
