Li-ling Peng

Biography

Li-Ling Peng completed her undergraduate studies in nutritional sciences at Fu-Jen Catholic University in Taiwan. She earned a graduate degree of multidisciplinary health communication studies from Fontbonne University in Missouri, and has been a graduate intern at St. Louis Children's Hospital and the Health Enhancement Research Organization Forum. Ms. Peng is currently completing her Ph.D. in nutritional sciences at Texas Tech University. Ms. Peng's research interests include community nutrition, obesity prevention, food security, nutrition education, health communication, as well as food and nutrition therapy. Ms. Peng completed her dietetic internship at National Taiwan University Hospital. Before coming to the U.S. to pursue advanced degrees, she was a Registered Dietitian (RD) in Taiwan and had additional clinical trainings in diabetes, weight management, renal nutrition, and long-term care. She holds certificates in diabetes education, weight management, and professional food safety management. Her career also includes serving as a dietitian coordinator at Taitung Christian Hospital and a campus dietitian director at National Taipei University of Education in Taiwan. While she worked as a dietitian, most of her weekends, she traveled to remote areas teaching nutrition courses at different community health centers. She has a strong passion to deliver nutrition education in need and has been awarded the best dietitian of weight management for her service dietetics. She is now a member of the Academy of Nutrition and Dietetics and the American Society for Nutrition.
