Christina Campbell is Associate Professor of Food Science and Human Nutrition in Lowa State University.
Research Interest
Research agenda addresses the anti-oxidant and anti-inflammatory effects of the acute and chronic consumption of bioactive food components found in plant-based foods, such as soy, flax, and Camelina sativa to prevent chronic disease. Currently assessing the influence of maternal physical activity and omega-3 fatty acid intake on fetal DHA status.
