Matthew J. Farber
Assistant Professor of Biology
Biological Sciences
University of the Sciences
United States of America
Biography
Dr. Matthew Farber created the Brewing Science Certificate Program at University of the Sciences when he was a Teaching Postdoctoral Fellow under Dr. Peter Berget. While a postdoctoral fellow, Dr. Farber designed and instructed the graduate Biotechnology courses, integrating student-driven, inquiry-based research into the lab. Dr. Farber’s research aims to develop biotechnological applications for the improvement of fermentation quality and practice, with a focus on proteases and their influence on beer quality. He is a member of and has presented at the American Society of Brewing Chemists, Master Brewers Association, and American Homebrewers Association.
Research Interest
"Measurement and manipulation of proteases relevant to fermentation sciences. Real-time analysis of protease activity in cell culture models. Identification and engineering of novel fermenting microbes. Development of inquiry-based, research-focused curriculum."
